Spring arrived on the calendar this past weekend
and we had a glimpse of it with our warm temps, as well!
YIPPEE!
It sure got us excited for the season to come!
With Easter celebrations, family get-togethers, and all the sweet moments this new season brings, it’s the perfect time to serve up a dip or two and enjoy the joy of sharing. And since National Chip and Dip Day just happens to take place this week, there’s even more reason to celebrate these easy, crowd-pleasing favorites. Whether it’s little hands eagerly scooping or loved ones chatting around the kitchen, these simple bites remind us that it doesn’t take much to create something truly special.

Today, Laura’s got 2 of her favorite springtime dip recipes to share
plus a few other simply GRAND options to consider, too!Â

One thing both sides of our extended family agree on is
our LOVEÂ of deviled eggs!
My deviled egg recipe is one of the most requested items on our Easter menu!
I’ll often find myself boiling at least three dozen eggs
peeling them carefully,
separating the whites from the yolks,
blending the delicious yellow mixture Â
and then filling egg whites galore as part of our Easter gathering!
They all get gobbled up, that’s for sure,
And while it’s certainly worth it, I’ve also found this shortcut recipe
to be a great option when time and stamina is short!

It’s also a wonderful way to use up all those hard boiled eggs you decorated
the week before!
Spread on a piece of bread or some crackers… It makes a delicious snack or lunch!
This dip includes all the flavors of the real thing
but requires so much less work ahead of time!
And the very best part… no perfect eggs are needed!

INGREDIENTS
• 12 eggs, hard boiled
• 8 ounces cream cheese, softened
• ¾ cup mayonnaise
• 2 Tablespoons white vinegar or dill pickle juice (or a combo to equal 2 Tablespoons)
• 2 Tablespoons regular mustard
• 1 teaspoon sugar
• ½ teaspoon salt
• ½ teaspoon ground black pepper
• paprika, fresh dill & sliced green onions (for garnish)

DIRECTIONS
Chop up 6 eggs (whites and yolks). Separate 5 of the other eggs and add the yolks to the other 6 eggs that you’ve already chopped up. Meanwhile chop up the 5 extra hard boiled egg whites and save the final hard boiled egg for garnish.
Add the cream cheese, the mayonnaise, the vinegar and/or pickle juice, the mustard, the sugar, the salt and the pepper to the eggs that have been chopped up. Put all of these ingredients into a food processor.

Blend until mostly smooth.
Fold the 5 extra egg whites that you’ve chopped into the smooth egg mixture. Â

Put into a serving dish. Slice the final hard boiled egg and arrange that on top of the dip. Garnish by lightly sprinkling paprika, fresh dill and thin slices of green onions on top (optional).  Other options for garnishes include chopped green olives or bacon!

Cover and chill the dip until ready to serve. Serve with vegetables and/or crackers. (We included bagel chips with petite carrots, sliced cucumber and miniature cherry tomatoes on our serving platter.)


This dip is the most requested by my family,
especially when spring and summer roll around!!
It’s also very easy to put together… ready in just 5 minutes,
so I always keep the ingredients on hand for a quick prep!

INGREDIENTS
• 1 14.5-oz can Southwest Corn (w/Poblano & Red Peppers), drained
• 1 14.5-oz can Fire Roasted Corn, drained
• 1 cup finely shredded cheddar cheese
• garlic powder, to taste (¼ - ½ tsp)
• ¼ cup mayonnaise (give or take)
• cayenne pepper to taste
• Frito Scoops
Optional Ingredients
• chopped black olivesÂ
• 2 green onions, choppedÂ
• cilantro to tasteÂ
• lime garnish

DIRECTIONS
Mix drained cans of corn, shredded cheddar cheese and garlic powder. Also add any optional ingredients - black olives, green onions and cilantro. Â
Stir in enough mayo so that all the ingredients stick together (about ¼ cup).
Add cayenne pepper to taste. Garnish with lime wedges. Chill or serve immediately with Frito’s.

So simple, so quick and so delicious! ENJOY!

Creamy Greek yogurt mixed with fresh dill, parsley, a squeeze of lemon, and a hint of garlic. Bright, tangy, and perfect with veggies or pita.
🟢 Mango Salsa
This fruit salsa features juicy, sun-ripened mangoes tossed with crisp red onion, spicy jalapeño, and a generous squeeze of zesty lime. It’s the ultimate "sunshine in a bowl" dip.Â
🟢 Avocado Lime Dip
Smooth avocado with lime juice, a pinch of salt, and a little Greek yogurt for extra creaminess... Fresh and simple. OR whip cottage cheese into the avocado mixture for an extra dose of protein!

These are all easy to pull together and perfect for letting even your young Littles help stir, scoop, and taste along the way!
