snack time with Littles! Part 2 - snacks made with ❤️

Does this phrase bring back memories for you?

It’s one of those simple sayings we learned as kids, 

and, to this day, more oten than not, it still proves true

(especially here in Minnesota)!


This year has been a perfect example - strong winds, cold snaps, and snowstorms one week, followed by milder days that feel almost like spring the next. We're never quite sure what to expect and we are often surprised as the weather shifts from season to season.


When we taught kindergarten, March was the perfect time of year for a study of the weather!  We’d become “meteorologists” and graph the daily weather patterns and we kept a monthly calendar, recording whether it was a “lion” or “lamb” day.  



Just like March, 

our days can hold a little bit of everything…

Busy moments, cozy pauses, and sometimes unexpected surprises in between,

Hmmm... March weather seems to mimic times spent with our Littles!


And that feels like the perfect lead-in to today’s topic.

We’re sharing Part 2 of our Snack Time with Littles series,

this time focusing on snacks made with love!


While the weather outside may shift from lion to lamb, one thing stays steady: the fun found when making a special treat with or for the Littles in our lives! 



Last week, we shared Part 1 of this series.


That post was filled with all kinds of tips - our practical suggestions for snack time with Littles and we also included our simple ideas for making it more memorable and fun for you both! 


Today we’ve got 5 favorite snacks to share!

Most involve a few steps of prep 

while also being super easy to pull together!

Even those that include a recipe can be followed with Little helpers at your side!



These bites of goodness are so simple to make 

and are packed with a combo of sweet and salty flavors!

Your Littles will love them whether you call them monster energy balls

or rainbow energy balls!

(We've been known to switch it up!)

Either way, they are delicious!


INGREDIENTS (makes 16-20 balls)

• 1 ½ cup quick oats

• ½ cup creamy peanut butter

• ⅓ cup honey

• ¼ cup mini M & M’s

• ¼ cup mini chocolate chips

• ½ tsp vanilla 



DIRECTIONS 

Mix all the ingredients together in a big bowl.  Stir until the peanut butter and honey are completely combined.


Roll scoops of mixture into balls  that are about 1” in diameter.  Place the balls on a cookie sheet lined with parchment paper.


Chill the energy balls for about half an hour.  Store the balls in a covered container.

Your Littles will love using their (clean) hands

to mix the ingredients together and to roll the balls, too!




Here’s an easy snack or even a lunch idea for you…

definitely a fave of our Littles!

Littles of all ages eat these up!

Really!  Who are we kidding?

Everyone we know eats them up!


INGREDIENTS (for 6 pizza logs)

• 6 egg roll wrappers

• pepperoni slices (we used the mini ones)

• 3 or 6 string cheese sticks (see below)

• water

• 1 egg

• 1 Tbsp melted butter (optionial)

• ¼ tsp garlic powder (optional)

• pizza sauce/marinara sauce


DIRECTIONS 

Place an egg roll wrapper in front of you diagonally.  Place 3-4 pepperoni slices (more if using the mini ones) on the lower half of the egg roll wrapper.  Then put one cheese stick on top.  (NOTE:  We split the cheese sticks for our younger Littles, using only half of a lengthwise one for each pizza log.)


Fold the egg roll wrapper over the cheese and pepperoni and then roll it up halfway.  Then tightly tuck in the sides so the cheese doesn’t leak out.  (You may even want to wet those corners to help with this.)  Then roll up further before wetting the edges of the top corner of the egg roll wrapper to seal it up!  Continue to make the pizza logs!

Littles love helping with this step!


Place the pizza logs in the air fryer, or an air fryer liner first, like shown in the photo.  (You may need to make more than one batch, depending on how many pizza logs you plan to make.)  Crack an egg into a small dish and whisk.  Brush each pizza log with the egg wash.


Cook at 400 degrees for about 8 minutes, flipping the pizza logs halfway to brown evenly.   


OPTIONAL:  When done, you can brush melted butter mixed with garlic powder over the pizza logs while they are still warm.  NOTE:  We ultimately omitted this step as the pizza logs were already a bit greasy from the melted cheese and pepperoni inside them.  We actually put the pizza logs on a paper towel when they were done cooking and patted them a bit to remove any excess oil before serving.


Serve with warm pizza or marinara sauce.  

OOEY GOOEY GOODNESS!  YUM!




We call these Apple “Donuts” even though there’s no hole in the middle.  

We wanted to see the “star” inside the apple instead.

To discover it for yourself,

 cut an apple sideways instead of through the core.


We cut our apple in slices about ¼” thick and then spread peanut butter on each. We, of course, also had to add our sprinkles and chocolate chips. Our Littles insisted!



Your apple donut combinations are endless!  For example, you could spread nutella, vanilla frosting or yogurt on the apple slices and then top with mini m&m’s, coconut, chopped nuts!  





We love making smoothies with our Littles but here’s an alternative!

This treat tastes just like a frozen ice cream bar!

While it takes a bit of time to prep (while it freezes), 

Littles will LOVE the process!

Another plus?  This treat is versatile and you can switch up the add ons!


We used yogurt, fresh fruit and mini chocolate chips!


DIRECTIONS

Line a baking pan with wax paper.  Spread yogurt on top of the wax paper, ¼” - ½” thick.  NOTE:  We used what yogurt we had - two different kinds that we swirled together!  


Here's where Littles can get creative!  Sprinkle on fruit that you’ve cut into bite size pieces (we used strawberries and blueberries).  Then sprinkle chocolate chips on top and press the toppings gently into the yogurt.  Freeze until the yogurt is set, 2-3 hours or overnight.


When frozen through, peel the wax paper off of the yogurt bark and cut or break into pieces.  Store in the freezer in an airtight container or in a freezer bag.  (The bark does melt fairly quickly so be mindful of that!)

These are a favorite snack anytime

but most especially so during the summertime!



Have you ever eaten milk toast?  

Apparently, it’s known as a comfort food, dating back to the 19th century!  

This recipe is basically that, with a colorful twist!


In school, our kindergartners would often celebrate colors and one of our favorite treats to make with students was Rainbow Toast!  The kindergartners would paint their bread, we’d toast it and butter it and… YUM!  These days it’s a treat we make with our Littles!

Here’s how to do it!

INGREDIENTS

• bread (white works best, but any will do - we used whole grain)

• milk (any kind)

• food coloring (a small amount of several colors)


DIRECTIONS

Fill 6 small cups with milk (we used small custard cups).  Add a drop or two of food coloring to each and mix. Set out the cups of colored milk, paintbrushes and plain bread for your Littles.


Let your Littles paint a rainbow (or any colorful design) on their bread.  Encourage them to use a little milk at a time - you don’t want to have soggy toast!


When your Littles are done painting, take the bread and pop it in the toaster.  We toasted ours at a medium setting.  When it was done, we turned the bread over and toasted for a bit more!


When your rainbow toast is done, let it cool or add butter if you’d like!  ENJOY!

Oh my, Laura and Laurie, if I'd known about Rainbow Toast when my kids were little, I certainly would have made this with them!! We used to celebrate the 100 Day of School and Dr. Seuss Day around the same time so Green Eggs & Ham were often on the menu at school, or cooked in our FLS classes. :) Kids would weird out at the green eggs but did like them if they could get past the green! ;) Miss cooking with our kiddos!!
